Vacationing in Tampa - Gina

Today (and yesterday as well), we are in Tampa with my husband on his business trip. The boys and I wake up and enjoy a huge breakfast in the lobby. Then we change and stay in the pool until lunch. We come back to the room where I make sandwiches (or leftovers from dinner the night before). We have puddings, applesauce, oranges, chips and it is a variable feast. Then we nap for hours. Get a shower and get ready for our evening with Daddy. It is so relaxing and fun. I wish we had a couple more days before we have to leave. But sadly this is our last full day. Tomorrow, it is breakfast and then driving home all day.

For lunch, I had half of a Bacon Chicken sandwich from last night, chips, and pudding. I forgot to get a cup of oranges for myself. Maybe I will have a snack later. Mmmmmm.

I wondered what it would be like months or years from now, I may never remember today's date or worst plunged into a total nightmare of forgetting my name and my home address. So there I was staring at the screen thinking. I confess to not posting for a long time because I have eaten the exact same thing for weeks and weeks. Last week was spring break and my best lunch (partly because I didn't have to prepare it myself) was eaten at The Rainforest Cafe at the Mall of America. The Guacamole Burger had lettuce, tomato, cheese, guacamole, bacon and onion stacked on it. It was delish! Half a burger would have been fine, but I just couldn't stop eating and ended up stuffing myself.

2/18 - Thursday is My Favorite Pasta Bowl!

I've fallen into what seems to be a food habit. The cafe in the building next door has "build your own" pasta bowls on Thursdays and Fridays, and I've become a Thursday pasta bowl buyer (because they're HUGE and only 6 bucks).

Today's bowl:

  • Bowtie pasta
  • Chicken
  • 3 Meatballs (lil ones, 'cause I wanted to try 'em)
  • Broccoli
  • Zucchini
  • Mushrooms
And a roll.

Yum! And I can eat the other half of the bowl for dinner before I teach my night class. Voila!

Boring Lunch Today (Ti)

Extremely boring lunch today. I have a doctor's appointment so I didn't plan very well AND I have no food in the house. I had a can of Amy's Organic split pea soup. That's it. It's great but I needed some crackers or a piece of fruit to round it out.



I am about to leave work for the appointment and then afterwards, I plan to hit the market. Hope you all had a better lunch than I did.

BBQ Tofu Cubes and Raspberries

I have been trying to eat a little healthier lately and decided to try and recreate a dish that a local grocery store makes so I looked online and found a recipe for BBQ tofu cubes. I added some more veggies to suit myself and then had raspberries as a side. I think I was eating summer-y type foods in hopes that spring will come sooner than Punxatawney Phil predicted!

If interested, here's the recipe with my notes and additions:

1 box firm tofu, drained (I use extra firm, non-silken)
assorted veggies to taste (today I used broccoli and onion but I really like edamame beans in this)
1 Tablespoon oil
2/3 cup vegan BBQ sauce (not being vegan I throw in whatever BBQ sauce we have in the fridge)
1/2 cup water
2 Tablespoons soy sauce
1 Tablespoon sugar

*the recipe also calls for hot sauce to taste but since I was using habenero BBQ sauce, I skipped that and it still had enough zing to make me happy.

Dice tofu into cubes (I prefer smaller but bigger is fine too). Heat oil in a frying pan and add tofu, sauteing until tofu is a light golden brown. Set aside. Saute any veggies you've chosen until desired softness. Add tofu back into pan.

Meanwhile combine the remaining ingredients in a small bowl and microwave for one minute. Add into tofu mixture. Cook until sauce thickens considerably. (I still find this to be too saucy for my tastes and generally halve the sauce measurements but you might like it drippier.)

Serve hot or cold. Makes 2-4 servings.

I was going to do an update post and list my last several lunches, but I can't remember it all. I have a cold and I'm very congested, so that's making it harder to think.


I wanted homemade chicken soup for lunch today, but that would have required some effort on my part, and when I thought about it, it was already nearly 11 am so it would've taken too long anyway.

So I made a scrambled egg and ate it with a whole wheat bagel with a small amount of butter and honey.

I think I'll go make that soup right now for dinner.

Or something else really spicy to clear my nasal passages.

White Chocolate Macadamia

YUP! You're reading it right - I had cookies from Brent and Sam's for lunch - White Chocolate Macadamia dipped in a glass of milk. Got it from Fairway Market the other day. Definitely bad for the diet plan but worth a try while working from home. *LOVE IT*  Plus my body deserves to be spoiled after shoveling that pile of unbelievable heavy snow. I am one of the unfortunates - I hear my muscles crunching...

Thursday - Tempeh Surprise! (Ti)

Today, I had leftovers from dinner so in order to give you the entire story, I have to talk about dinner first.

I had this block of Tempeh in my fridge and since I had never cooked with Tempeh, I had no idea what to do with it. I saw it at Whole Foods and all my vegan cookbooks raved about it but I was so distracted when I bought it, that I didn't really buy any of the ingredients to do anything with it. Duh.

So last night I did the following:

  • Sauteed onions and garlic in olive oil
  • Broke up tempeh block and browned it a bit
  • Tossed in stewed tomatoes, and included just a bit of the juice
  • Ripped up kale (leafy green veg) and tossed that in
  • Added some of my Pampered Chef Sundried Tomato seasoning
  • Tossed in cooked, whole wheat pasta
  • Tossed it around and then served it up

You could add parmesan but I've given up dairy too, so that was out. It was wonderful though! The tempeh sort of reminded me of pine nuts which I cannot eat either but love.

I had leftovers for lunch but even with all the vegan-ness of this dish, I am still reacting to it a bit. Not sure what is setting me off this time. Perhaps, the tempeh was processed where nuts are processed?

Anyway, it was good and even better the 2nd time around.

Tuesday - Where Do the Days Go? (Ti)

I am a bit behind in posts but here is what I put together for today's lunch:

  • 2 cups of Trader Joe's Organic Lentil soup.
  • 1 slice of whole grain bread, with 2 slices of Tofu cheese, broiled in the toaster oven.
  • 1 apple (which I am about to eat since I am still starving).
  • Water (lots and lots)

With all of this healthy eating, I have lost a few additional pounds. I lose weight all the time and then gain it back, but this time I actually broke a plateau that I've been on for 6 weeks, so I'm happy about that.

SATURDAY
I spent virtually all day baking this awesome German Chocolate Ganache Cake for my husband's birthday, sampling everything as I went along, but those nibbles don't count towards lunch, so... I had nachos made with more left over taco seasoned beef over tortilla chips, sprinkled with shredded american cheese and microwaved for about 1 min 30 seconds, served with store bought mango salsa.

SUNDAY
Was at my daughter's all day volleyball tournament out of state, so we packed lunch in a cooler and ate it sitting on the floor of the balcony area of the gymnasium. We had turkey sandwiches on whole wheat, plain chips, grapes, an orange, an apple, store bought chocolate chip cookies and iced tea.

MONDAY (today)
I had left over corned beef hash and the smallest amount of sauteed Swiss Chard (diced corned beef, onion, and potatoes cooked in a skillet with salt, pepper and dried thyme), from Thursday night's dinner. Yikes. It tasted fine, but that's cutting it close on the spoil deadline... oops.

Catching Up... Clover

I keep thinking that I'm updating this daily and then I actually look and I haven't written anything since Tuesday. What fail on my part!

Wednesday - What did I have for lunch on Wednesday? It's not like it was that long ago, why can't I remember? Was it sandwiches again? It must have been. Yes. Ham sandwiches that Oldest didn't like because I accidentally bought peppered ham instead of whatever N normally buys. I had a ham sandwich, an apple and a yoghurt of some kind.

Thursday - I was in a bit of a rush Thursday, so ended up making this chickpea salad and a couple of Nice biscuits. Salad was a mixture of cooked chickpeas, tinned sweetcorn, tuna, taco powder, breadcrumbs, a little grated cheese, and lemon juice. I love it. Usually have it with pitta bread but I seriously had nothing in the house.

Friday - N had an unexpected day off and we ended up having a lovely picnic as a family in our living room. We made ham and cheese rolls and shared some crisps and drank squash. I love picnics. Especially indoor picnics.

Saturday - It was a friend's birthday, and he invited us out for bowling followed by Nando's. I do love Nando's. I had what I always have - a chicken breast fillet burger, mango and lime sauce, no mayonnaise, with cheese and a pineapple. Plus chips and a Coke. It was very good. Next time I might order the corn on the cob just to be a little healthier, but whatever. It was a special occasion.

Saturday, Beef Kare Kare

Had a full plate of Beef Kare Kare (Filipino version of the beef stew flavored and thickened in a peanut - based sauce, with a variety of vegetables). My sister cooked it for me and all I have to do is provide a complement (a real good one of course) and I was on my way through licking the very last sauce on the plate.

I never posted yesterday's lunch, and since it was NOT turkey on whole wheat, I figured it was worth mentioning. So, yesterday I had ...


leftover pasta with broccoli and ham in a cream sauce. It was homemade from dinner two nights prior. Yum. Don't hate me.

Today, I had more leftovers. Trying to clear out room in the fridge ... ;)

taco wrap consisting of seasoned beef, shredded cheddar and lots of lettuce topped with mango salsa all rolled up in a flour tortilla.

Of course the salsa was so yummy, I had to spoon some on my plate and eat it with a handful of tortilla chips. Then I ate all the salsa and still had chips on my plate, so I needed another spoonful of salsa. Then I ran out of the chips part, so I ... oh you know the drill. ;P

Then I had a scoop of that homemade pomegranate sherbet. What? It's Friday!

We're going away for two weeks and I was ravenous.

Found leftover rice, plus a little tofu that would go bad before we came back, and some scallions - cubed the tofu in a frying pan for ~5 minutes, added scallions and some Indonesian spice mix we have right now, then added the rice that had already been reheated in the microwave. Didn't take much longer than making a sandwich and now those things aren't in the fridge!

Today was lunch at home. Our neighbors sent us home with a pineapple, papaya, and coconut after the big Lost Premiere Bash they had on Tuesday. I adore fresh pineapple. So, of course, I made my meal around it today.

I've got a few freezer bags of frozen cooked cod scraps, from when we were doing our weekly whole local fish delivery (mostly cod.) I eventually figured out that after filleting the fish, boiling the spines with meat on them to make fish stock (also in our freezer in large quantities), I could take the scraps off the bones and make fish cakes out of them, or mix with mayo and pretend it was tuna salad.

This time I defrosted it from the freezer and did the same, and had a cod "tuna" salad sandwich on pumpernickel bread for lunch.

I feel compelled to tell you that I don't eat out all the time. It feels like every time I post my lunch I post where I have eaten. Oh, well. I should just not let it bother me.

Today was our Play-Date Wednesday. Instead of Chick Fil A, we went to the closer McDonald's. (Not nearly as good, or as good for me.)

Riley had a Happy Meal. Chicken nuggets and Fries.

I had a Happy Meal. Double Cheeseburger and Apples. I ate some of his fries...he had some of my apples.

Total Points: 14 (almost half a days point right there!)

I really don't like eating out at McDonald's because the amount of food you get is so small for the amount of points (calories, fat, etc.) But they are our only local restaurant that has a playground.

I went to a Soup Swap this weekend - brought 6 quarts of my homemade soup there,
and came back with 6 quarts of other peoples' instead, mostly frozen.

One of them was very simple a Vietnamese chicken soup with broth, rice, chicken, and fish sauce. And it sounded delicious, and I had a mishap where some of it spilled in the car on the way home, so I put it in the fridge instead of the freezer.

Today I had it for lunch, with scallions and cilantro, and the finished off lunch with a dessert soup from our dim sum party - sweet ginger soup and tofu mixed in.

Feb 2, Kara, more winter means more soup YAY!

OK, so I am trying to look at the bright side! I love soup... I wish I could have weekly soup parties... but I don't know anybody else here who likes soup as much as me.

I also realize that I have been a slacker and failed to mention that most days I eat a can of Dinty Moore or Chef BoyRDee or cheese crackers or poptarts. I apologize. Anyway, today I am having another very easy soup (leftover from last night) that I love. It has ground beef, a little fresh onion and garlic (Chris made it... otherwise it would have flakes), and a few cans of tomatoes, okra and corn (I use the Margaret Holmes brand) and salt and pepper. Instant (roughly), delicious soup.

Tuesday - Healthy and Vegan (Ti)

Today I brought a black bean burger and whole wheat bun. I will toast both in the toaster oven here at work and then warm up a cup of tomato soup to round it off. I am trying to live a vegan lifestyle but I am taking baby steps to get there so you may see me slip every now and then.

I really need to invest in a good vegan cookbook but many of them use such complex ingredients. I don't want to spend a lot of time in the kitchen. I want quick and easy, but tasty. Anyone know of any good ones?

I plan to eat at my desk but afterward I'm heading to the university library to check out what's available.

The kids were home and we didn't feel like leaving the cozy confines of the house. So I had the rest of the delicious Broccoli Buttermilk Soup* I made for dinner last night, a handful of cherries that had seen better days, and some plain rice cakes.

*I altered the recipe just a snitch by using only 1 stick of butter instead of the full pound and used three potatoes instead of just two. I happen to have a handy-dandy immersion blender (one of my favorite kitchen tools ever!) so I just pureed the whole pot right on the stove.

The corned beef was left over from dinner a few nights ago--not the kind from the deli, so it was oh so good and oh so much better for you. Especially since it was preservative free, antibiotic free, hormone free, blah blah blah beef, too! Bought from Trader Joe's last spring and kept in a deep freeze in my basement freezer until last week.

Ah, the 1st of February and the erm, beginning of a certain monthly visitor. So today's lunch is quite unhealthy. But I expected that and just went with it. I actually had my favourite ever meal - leftover pizza. I had three, possibly four slices of cold leftover pizza from Pizza Hut. One slice Hawaiian, one slice Meat Feast and one (or two) slice(s) of Super Supreme (minus mushrooms, with pineapple instead). And with that, I had a half packet of gummy Haribo sweets and a little pot of chocolate custard. And a big glass of Coke.

Yesterday I had to run errands, and after a long stop at the library where we met some friends, we ended up stopping at Sonic, since we still had two more stops before we could head home (living in the rural midwest means that I have to drive 25 minutes into town to go shopping, etc., and therefore do everything in one trip. So, we don't go home for lunch in between the library stop and errands). I felt quite virtuous since I had run 10 miles on the treadmill and still only ordered a grilled chicken salad at Sonic. I did get a Cranberry limeade, which I absolutely love, but was none too impressed with the salad. It was Ok, but not great.

Sunday, Dim Sum Party, Abbe

Well, that was cool! We organized a homemade dim sum potluck - each person tried to bring one dim sum style Asian appetizer - we had several kinds of dumplings with various amounts of homemade-ness, steamed pork buns, sesame buns, turnip cake, scallion pancakes, ginger tofu soup, fried lotus root, Chinese greens with sauce, custard buns with crunchy "pineapple" topping, and congee. It was a little chaotic in the kitchen since many things needed to be reheated, steamed, or fried before serving but really tasty. I made two dishes since I felt like the host should put in a little extra effort - the turnip cake and one batch of the custard buns.

It was kind of lunch *and* dinner because it was plenty of food.

Saturday Lunch


I love lentil soup and I generally buy every kind I can find in the grocery store since I can never remember which brand it is that I like best. With actual snow on the ground making us feel like we live in the north again, I cracked open a can of it for lunch today. Today's brand was Health Valley and while I know a lot of people need or want lower sodium, I thought this was a little bland and chalk it up to the missing punch of salt (not that I like loads of salt). So a bowl of lentil soup, an avocado, and a cup of Christmas tea (I'm giving up diet Coke again but I needed the caffeine for my headache) made up lunch today.

This is one step better than leftovers: 2 nights ago, or maybe last night, I made turkey broth to use some turkey legbones with a bit of meat on them. cut the meat off after cooking and put it in the same container. We also had cooked brown rice, and a leftover chicken drumstick, and the scraps from shredding a lot of turnips in the food processor - so I threw those all into the pot long enough to cook the turnips, went back to handing K a tissue for her awful runny nose every few seconds while I waited.

despite being the sick one, she didn't eat any soup - some days she likes it, but not today.

Lunch @ Home

It was snowing when I got up this morning so I decided to work from home today. In turn I get to eat homemade chicken adobo with white rice. Then I had three pieces of almond clusters chocolates and later on I was finishing up a pack of M&M. Wasn't that all enough, I headed for a bowl of chocolate ice cream and finished it with a glass of water. So much for diet and exercise huh! That is why it's not safe for me to stay home all day. Not at all!!!

Thursday - Lazy Luncher (Ti)

I took my walk this morning and wiped myself out. It's windy and cold and since my stomach is already yelling for food (and it's only 10am, my time) I walked across campus to get a Subway sandwich for later. I needed something a tad more substantial than my can of soup. So here is what I got:

  • 6-inch on Honey Oat with lettuce, tomato, cheese, some red onion, avocado and some sweet onion dressing.

It's lacking a good source of protein but the bread should sustain me as I have been giving up bread lately.

I had the last of the Tuscan Bean Soup I made over the weekend. It was not a little bit of soup that was left either but several servings worth. It is just that good! (And my hubby wanted a bowl of it to add to his dinner tonight and was not terribly pleased when I said it was gone. ) Anyway, it was a recipe I got off of Lakeside Musing and the actual recipe can be found here. Wednesday - Soup Was Calling Me (Ti)

I hit a Mexican buffet for lunch. The buffet is particularly nice because the Manager makes sure that my food sensitivites are addressed. That means that the soup is not made with an animal base and that it's filled with lots and lots of veggies. Isn't that nice of him? You are probably wondering what is so great about this soup but it IS great. I top it off with cilantro and shredded cabbage and it really fills me up.

The rest of the buffet offers up your common fare...refried beans, rice, carnitas, roasted chicken, etc. I had some beans and carnitas but the rest I skipped. I was too filled up by the soup anyway.

While getting out of the cafeteria today my phone vibrated so I took it with my free hand while the other is holding a styrofoam platter of grilled tuna fish and sweet corn on the side. It was a long chat so I decided to take the stairs instead of the elevator. Right after the last tread of the stairs I tripped with my platter flying straight to the floor. I ended up attacking a Granola bar for lunch!

It's nearly dinner time in my corner of the world right now, but I've only just found time now to post what I had for lunch today.


A dear friend of mine** stopped by this morning to say hello, so of course we caught up over a cup of coffee, but then in the blink of an eye it was lunch time. I thought my regular standby of turkey on whole wheat with tomato soup might be a bit ... I don't know... ordinary(?) to serve a friend, so I broke out the skillet and made us a quick, easy, hot lunch:

Quesadillas with grilled chicken and cheddar cheese
Homemade guacamole
Smoky Peach Salsa (from Trader Joe's)

Iced Tea

**This friend and I have been good friends ever since we met at a La Leche League Meeting (breastfeeding support group for new moms) when our now teenagers were babies! I guess you could say we're bosom buddies in the truest sense! LOL! ha ha ha! :o)

Tuesday - Chipotle Called My Name (Ti)


Seriously... it said "Ti! Ti! You know you want a barbacoa salad!" Since the weather called for more rain, I packed Lentil Soup for lunch and then told myself that if I walked to Chipotle, which is a little ways away, then I would have earned the salad.

I walked.

I ate. I had chips, too.

In case you haven't been introduced to the greatness of Chipotle, the barbacoa is braised, spicy shredded beef. I have it on top of a mound of lettuce with pinto beans, tomatoes, salsa, some cheese, guacamole (there's that green thing again) and a bit of sour cream.

If it weren't for the cheese, sour cream and chips that I scarfed down, it would have been a lot healthier.

I tried to read more of Case Histories but it isn't pulling me in. It's sort of blah. Instead I people-watched.

Bitty and I went to a friend's 6th birthday party today for lunch.

Birthday Cake, of course


I ate two helpings of delicious taco salad. (It is a delightfully easy dish. 1head of lettuce. 1 lb ground meat with taco seasonings. 1 bag of crushed Doritos. 1 bottle of Ranch dressing. When we make it at our house....I do not use all the dressing...but the rest of our playgroup follows the recipe above.) And of course, birthday cake and ice cream.

I did not dare count the points of this meal. However, the meal did not have an effect on the scale this morning, so I am calling yesterday a success.

Monday: The Green Continues (Ti)

Game On is officially over. Can you hear the happy tone in this post? However, it's not really over because I sort of have to eat healthy all the time. I used to think that it would be easier to make healthier choices if my health required it. Well, now my health does and I can tell you , it's not easier!

That said, here is my lunch:

  • A cup of organic, split pea soup (I seem to like green food).
  • A tiny little apple.
  • 3 whole grain crackers.
  • Lots of water.

It's tasty and healthy and very filling but a salad from Chipotle sounds much better right now. I am eating my lunch at my desk and then plan to take my book, and myself outside.

LeanCuisine Spinach Mushroom Deep Dish pizza

The pizza was very good. Only 340 calories, 7 g of fat (only 3 g saturated fat) and a whopping 18 g of protein. Sadly, though, it was very quick to eat. It's gone and I'm still a bit hungry. :(

I'll hold off, though, because my girls will be home from school in two hours and I will inevitably have a snack with them then.

1/24 : something old, something new - Abbe

Yesterday I cooked a recipe dauphinois potatoes (the ones you slice thinly and cook in milk) while we had farm-fresh raw milk in the fridge. This took advantage of a trick I learned somewhere along the way - you don't have to cook all the dishes in the meal the same day. We ate leftover sauteed veal cutlets, and newly cooked potatoes, and now we can cook some protein another day and have leftovers of the potato casserole.

Sunday, Lumpia

My sister in law is Filipino and one of the things she made for us when we went back home was Lumpia.  On Friday I got a wild hair that I wanted to try to make some myself so I googled up a recipe with a lot of favorable reviews and gave it a shot.

Since we live in South Dakota, I had to make do with phyllo dough for the wrappers, and they brown up REALLY fast, but otherwise it was a painless process.  Mike and I and the Bug loved them, the Pirate had chips and carrots.

This is the recipe we used. I think need time I'll try a potato version, but I'll definitely be doing this again!

Saturday: A Mexican Feast (Ti)



Today was my day off from the Game On Diet so I went a little crazy. We hit a local Mexican market but this market has a hot food counter so we ordered a bunch of different things. I ended up with a Shrimp Ceviche tostada and some soup. Ceviche is yummy. The shrimp is marinated in lime juice and jalapenos and a little onion. It's more of a summer food since it's cold but the sun came today so I figured, why not?

Also, I don't know why I call everything a 'feast' but I guess since I am so deprived of food that anything more than an apple and a wedge of tofu is considered a feast.

Today I had lunch out with the librarians I work with at the public library. Since it is a small public library we work by ourselves and never really see each other much. This was a nice time for us to catch up. I am attempting to be a bit healthier in my food choices (really, I do fairly well at meals, it my snacking that is out of control), so for our meal at Applebees I ordered the Tilapia with rice pilaf and broccoli. I am still full and it is supper time, and I haven't even had a snack!

Weekend lunches

I don't know why but somehow weekend lunches are harder for me than weekday lunches. This makes no sense as I'm a stay at home mom so have access to all the food equally everyday. But for some reason I graze my way through the pantry on weekends. Today I started with a can of lentil soup (it's cold outside and soup just seemed right). Then I pulled out a wedge of Wensleydale cheese with cranberries and ate the whole thing. Because I wasn't finished, I moved onto Quaker sour cream and onion mini rice cakes and finished up with Mexican blend cheese melted over plain rice cakes. ::sigh:: Not a fruit or vegetable in sight. I figure the sodium in the soup cancels out the health benefits of the lentils. Don't know why I feel compelled to do this on weekends, but there you have it. Maybe I should make Sunday lunch a cmpletely fruit and veg affair to try and counterbalance my poor choices today!

Yes, I have actually eaten lunch in the intervening week. But I signed up for this and promptly forgot it existed. Now it's on my blog reading list so I hope I'll notice it every day.

Today's lunch with the whole family at home : sandwiches and clementines.

We had a little bit of leftover roast beef that I thought we'd already used up for sandwiches. I decided it was still edible (barely - just over a week old). Two sandwiches - one with microwaved roast beef, blue cheese, a little horseradish, and mayo, the other with salami and american cheese and a few tiny bits of roast beef because there was a teeny bit more than would fit on one sandwich. I couldn't decide who got which so each adult got half of one and half of the other. K got a peanut butter sandwich - she still won't eat meat or cheese sandwiches.

The Best Kind of Lunch

I had the very best kind of lunch today: one that someone else made and another someone else paid for. ;-) A friend and I went for a walk and once back at her house decided to go to the ever tasty Just Fresh for lunch. Instead of driving the two seconds down the street to get my purse, K. said she'd treat me to lunch. Yippee! I got the Dijon Dill Chicken Salad sandwich with a fruit cup and my drug of choice: diet Coke. The sandwich was lovely as it wasn't overwhelmed with mayo like so many restaurant chicken salad sandwiches are and it came with lettuce and tomato on toasted wheat bread. Yum. The fruit was because I was trying to be good. Tasty food and lovely company. Best lunch all week.

I made sure to bring something from home to work today. I got the Hot pockets sitting in my fridge - just waiting for me to grab it. I was surprised because it was delicious (though I burned my tongue a bit after the first bite!).

So I got the Chicken & Cheddar with Broccoli in a seasoned herb crust. I couldn't remember how much I paid for it but believe me when I say it's delicious for such little simple looking pocket.

My preschool son and I have a playdate with several families every week. Most weeks we go to Chick Fil A, because of the playground is indoors and the food is better than McDonald's.

21 Jan, MammawVi's Tater Soup, Kara

OK, so I guess I've lurked long enough. Today I'm having MammawVi's Potato Soup, a la Kara...

This is leftover from last night, but here is the basic recipe:

1pkg frozen Hash Browns (I use Ore Ida... some people call these southern style or home style... they are not shoestring but more like chopped potatoes)
2 cans cream of chicken soup
1 sm box (about 30 oz) of chicken broth
1 pt sour cream
seasonings (see below)

reserve sour cream. put all other ingredients in crock pot and cook on low, stirring occasionally for 6-8 hrs (we tried 5hrs once and the taters were still a little crunchy but more than 8 and you've basically got a puree). add sour cream, cook 20 min. serve with shredded cheese, bacon bits, chives or anything else you like on potatoes.

seasonings (this is the a la Kara part)
I'm not big on measurements... so these should be to taste for your family...
1 small onion finely chopped (I add about 2 Tbsp of minced onion flakes instead because I am super lazy)
2 big dashes (heh) of minced garlic flakes
2-3 tsp of black pepper
3 tsp of salt (I use kosher salt... I'm not just lazy... I'm weird too)

some recipes call for cream cheese instead of sour cream... then sour cream on top... I think this would be good, but then you have to work to blend in the cream cheese at the end... so I skip that.

Wednesday - A Green Nightmare!! (Ti)

Today, I am enjoying an Indian dish called Panak Paneer. I am having it over brown rice. It looks like a baby threw up in my bowl but trust me, it's very tasty and healthy for you as its base is spinach. It does have a rather strong flavor so I am having it with a tall, tall glass of unsweetened tea to cut the taste a bit.

It's not at all what I was in the mood for but with the biblical rain storm that Southern California is experiencing, I decided to stay in. For fun, look at our doppler:

I am in Southern California and let me tell you...we are experiencing some WEIRD weather! We are in a tornado warning right now, if you can believe it. With the rain pouring down and the extreme weather warnings, I pulled out the following leftovers for lunch:

  • 3 ounces of pan-seared Salmon
  • A cup or so...maybe a cup and a half of Quinoa sauteed in olive oil, garlic and sun-dried tomatoes.
  • Stewed green beans with feta cheese and garlic
  • 1 glass of unsweetened tea

With all the garlic I was hoping my co-workers would stay away but I wasn't so lucky!

Today, the boys and I had leftovers from last night's dinner: leek and bacon pie. I loved it last night and was quite looking forward to it today. Only managed half a bowl with a lemon lucozade. Still, a 'proper' lunch. That's progress!

Monday's Lunch Plan: Ti

I'm still Game On'ing it which has been a challenge with all of my food sensitivities but here is what I plan to eat at lunch today:

A smallish bowl of navy bean soup
A few multi-grain crackers
A handful of sauteed spinach or perhaps a spinach salad (not sure which yet)
A tall glass of iced, herbal tea (no sweetener)

I have to say that I always feel so much better when I watch what I eat, but I sometimes resent having to keep track of everything little thing that goes into my mouth. Sometimes I just want to chuck the wise choice and go with a Big Mac ;)

Monday lunch, Clover

Despite feeding the boys a lovely smoked haddock kedgeree for THEIR lunch, for myself, I only managed a small slice of chocolate cake, a pink lady apple, a banana, a raspberry yoghurt and a mini-bag of chocolate buttons. Tomorrow, I must have a better lunch than this.

After playing out in the snow with my girls, we came in for me to make them grilled cheese sandwiches with chicken noodle soup (Campbell's Sponge Bob variety) and fresh strawberries. My lunch was extremely pathetic. I ate the leftover hamballs and some honey roasted nuts. Impressive, huh?

Serendipitously I saw this today & had a bragworthy lunch! (but I'm sure they won't always be this way.) I salvaged a whole bunch of random leftovers from the fridge - half a sausage, some brisket we microwaved from the freezer last night, broccoli that sat out all day in K's lunchbox, a leftover baked squash, a few boiled carrots that made vegetable stock a few days ago, a bit of steamed collard greens... mixed this up into a sauce in a small frying pan while I was cooking pasta, and we had a hot lunch with protein and vegetables in it when we had almost been about to call for pizza.

maybe I will remember this the next time we have detritus from half a dozen of K's meals in 2 bite servings in the fridge and nothing in large enough servings for the adults.

Lunch at School on Friday, Tina


I never eat the hot lunch at school, so I bring whatever random item I can find at home that doesn't seem horribly unhealthy. Right now I am on a low carb/no carb kick just because it does make me feel better if I eat that way. So, today I had brought along a salad - lettuce, peppers, onion and some shredded cheese that I added my favorite- a Morningstar black bean burger that I chop up. Of course I add dressing, too.

I have to say that I probably have the saddest lunch of all of us. That would be a couple of slices of Honeybaked Ham that was left over and frozen from Christmas.

Told ya it was sad BUT I am having baked french toast & bacon for supper. Now that will be good:)

Today I had a really yummy lunch! I am on the Game On diet and have all sorts of health issues that prevent me from eating so many foods right now, but I found this wonderful restaurant that is 100% vegan and it's wonderful. I had this huge bowl of soup and it's filled with tons of fresh veggies and "seafood." It's hot, it's spicy, it's just what the doctor ordered. YUM!

I took the day off from work today to get some chores done. Our pantry is sadly bare but I ate:


1 wheat bread roll w/ peanut butter and honey

Yeah. Pretty sad. It was either that or rice and butter from take out last night. Oh. And a cup of coffee because I needed the pep.

.... that I burned!!! Ugh. And it was already 1:10 pm and I was so hungry, too. I did the old scrape-over-the-kitchen-sink-with-a-knife thing and it helped, but still.... Oh well. At least the cheese was melted, right? ;)
